Vinification:The maceration and the alcoholic fermentation take place in big oak vats (150 HL) for a period of 20 days. The fermentation is carried out only with indigenous yeasts . The aging takes place in big oak barrels (from Krasnodar), under controlled conditions of humidity and temperature, optimal for wine ennobling. The malolactic fermentation occurs during the aging in the big oak barrels for 2 years.
Food recommandation:Successfully accompanies grilled meat, red meat, turkey or duck. Excellent with aged cheeses
