Description: The grapes come from a 10-year-old vineyard in Vanju Mare/Oltenia. It has a 100% South exposure and the vines are planted on perfectly drained gravel/sand soils with a humus layer. The fruits are harvested by hand in plastic boxes during the day. Here the boxes are filled only about 50% to avoid crushing damage. The transported to the winery is done during the evening/night with a special truck. The the grapes are destemmed, selected and afterwards fermented in open stainless steel tanks without the addition of selcted yeast or temperature control. The alcoholic fermentation takes ca. 2 weeks and during this process pigeage is done manualy 3-4 times a day. During the decaying fermentation we start the malolactic fermentation by adding selected bacteria. So in the end the wine stays for at least 6-8 weeks on skins to assure a gentle and profound extraction of colour and tannins. After pressing follow at least 18 months of aging in 1000 litres Cuves (Slovenian and French oak). After racking the wine is also one time gently filtered before bottling.
Food recommandation: recommended together with veal dishes and fine cheese.
