what means it often produces only big amounts of rather trivial wines. But that's only half the story. Our Merlot can offer a lot more than that because we seek for an own, different expression and character. With particularly suited plots and matching wine-making methods Merlot results in very distinctive, complex and profound wines with an excellent ageing potential. Apart from mainstream thinking or already existing standards/idols and following our own philosophy of “natural creativity”we want to issue with our Merlots another statement of the amazing diversity this variety has to offer.
Due to its very expressive, full-bodied character this wine requires a solid food counterpart like hearty beef dishes, venison or something similar.Beside these adequate matches we would like to encourage you to experiment and enjoy it also with chocolate or/and coffee based desserts like Mousse-au-Chocolat or liquid chocolate cake.
To obtain just perfect ripe material the grapes for our red wines are always hand-picked and selected cluster by cluster over several vintage rounds. After destemming we don't crush them and we also waive the use of selected yeast. The alcoholic fermentation takes place in small stainless steel tanks without temperature control and pigeage is done manually up to 3 times a day. The wines remain up to 5 weeks on skins before it is pressed and racked in big wooden vats of 1500 litres. Here we initiated malolactic fermentation and the wine ages afterwards at least for 14 months before it is bottled.
