Description: This wine has a golden, bright, luminous color and a complex nose of yellow and exotic fruits. The bouquet is completed by appetizing aromas of baked bread crust, honeycomb, caramel and, due to prolonged contact with the skin, ethereal notes of brown and green spices. The wine is well balanced, with a medium body, structured by fine tannin and supported until the slightly ethereal finish by its creamy but solid acidity. It is still a young wine and we recommend aeration for at least one hour at a temperature of 10-12 degrees before consumption. Recommended serving temperature: 10-12 degrees

Recommended glasses: large glasses, like Burgundy Culinary recommendations: perfect companion for seafood, crustaceans and raw fish, but the association with veal or turkey can be interesting experiences.

For Bauer wine O.R.A.N.G.E. we selected absolutely healthy and perfectly ripe grapes from an old Sauvignonasse plantation, over 40 years old - Via Rozopol. I used this variety with discreet aromas due to its ability to express the origin and the terroir from which it comes. During the picking we were as meticulous as with our red varieties because any imperfection of the grapes or any trace of rot is brought out even more by the prolonged fermentation on the lees. The grapes are de-stemmed without being crushed and the fermentation takes place in stainless steel tanks with indigenous yeasts of our winery. During fermentation, we do the manual process called "Pigeage" at least 3 times a day to keep contact with the skins as long as possible and to avoid the mechanical extraction of bitter tannins. We do not control the temperature to initiate malolactic fermentation. For the 2017 harvest, the grapes were left on the skins almost 4 months before pressing. Next, the wine was left on full yeast without any other treatment or aging for 36 months, in used 1000 liter wooden vats. Before bottling the wine was lightly filtered and stabilized with a moderate sulfur dioxide treatment (similar to our red wines)
