Description: A powerful, rich wine with a consistent texture and a long, well-structured aftertaste, balanced. The extremely intense color and the aromatic complex are striking. Complex of cherries, blackberries, cranberries, blueberries and blackberries, dark chocolate and cocoa combined with a strong structure with ripe tannins and acidity, well highlighted by a long finish. Feteasca Neagră added an extra touch of elegance and softness. It's such a thoughtful wine to taste now as well as for decades to come.
Vinification: The ripe grapes of each component variety of the blend were harvested in the first part of each day. Destemming/crushing was followed by the cold maceration stage for 72 hours. Then the must was heated to a temperature of 18ºC to downgrade the fermentation. Maceration-Fermentation, together with movements of the wine through recirculation and "breaking the cap" was carried out for a period between 18 and 26 days at temperatures of 23-25ºC. Once the alcoholic fermentation was completed, the pressing at max 1.4 Bar followed, and the malolactic fermentation stage. After the fermentation, the component wines of the blend were transferred to oak barrels (barrique) for maturation, micro-oxygenation and autolysis. The aging periods in barrels were between 9 and 30 months, depending on the variety and the age of the wood of the barrels. Blending between the 5 varieties, Feteasca Neagra, Shiraz, Merlot, Cabernet Sauvignon and Dornfelder, was the last process before bottling.
