The v ividacidityreinforces the strong taste obtained from Rara Neagra and Saperavi. It is rich andbalanced on thepalate,with a v erypleasant fruitflavor and long aftertaste.
Vinification: The grapes are harvestedby hand,when reachingphenolic maturity,andcarefully selected on the sorting tables. The grapemustfermentation takes 15-18 days at 11°C. For the next 20 days the wine have to lain on a bed of its fine yeasts, while batonage wasperformed twice.
